Eaton's Jamaican Jerk Chicken

Preparation Time: 10 minutes
Cooking Time: 1 - 1½ hours
Marinade Time: 2 hours
 
1 - 1.5 kg. whole Chicken
1 tablespoon Eaton's Jamaican Jerk Seasoning
1 tablespoon Dark Soy Sauce
 
Cut chicken into portions. Rub Eaton's Jamaican Jerk Seasoning and soy sauce into meat, allow to marinate for at least 2 hours.
 
Heat oven to 170°C/325°F. Bake in Oven for 1-1½ hours or until juices run clear. Serve with rice and peas for an authentic Jamaican meal!
